Berry goodies from the garden

Gooseberry fool

A fool is a very simple, yet very delicious dessert made only from cream, berries and sugar. It can be made in advance and be served like chocolate mousse. It can be made with most kind of berries, just make sure to adjust the sugar content to the berries according to your taste.

500 g berries
150 g sugar
1/4 l whipped cream

Desert: Fool
Pour into six glasses...

Blend the berries and sugar and mix it gently with the whipped cream. Pour into 4-6 glasses, which must be served cold.

You can boil the berries and sugar for approximately 15 minutes before you blend them. Or you can use the berries directly from the bush. If you use fresh berries you have to rinse them more thoroughly.

Black currant muffins

If you have black and red currants in you garden and you get tired of making jam and juice, here is a recipe for muffins. You can use black or red currants or a mixture.

2 eggs
2 ½ dl milk
¼ tablespoon of salt
3 ¾ dl flour
2 tablespoons of baking powder
2 ½ dl dark sugar
1 tablespoon of vanilla sugar
50 g butter
2-3 dl berries

Berries
A mix of berries

Mix eggs and milk. Mix the dry ingredients and combine them with the eggs and milk. Melt the butter and pour it in the mixture. Finally gently mix in the berries. Pour the batter into muffin containers (max. ¾ in each). There will be approximately 20 medium-sized muffins. Bake in the oven in approximately 20 minutes at 200 degrees C.
